Ji publishes article on olive oil and muscle health in the Journal of Nutritional Biochemistry

A paper co-authored by Li Li Ji, PhD, exercise physiology professor and director of the Laboratory of Physiological Hygiene and Exercise Science (LPHES), was recently accepted and published to prestigious Journal of Nutritional Biochemistry. The article, “Protective Effects of Extra Virgin Olive Oil and Exercise Training on Rat Skeletal Muscle against High-fat Diet Feeding,” provides insight into how extra virgin olive oil affects our muscles.

Co-authors Tianou Zhang, PhD, professor of kinesiology at the University of Texas San Antonio, and Dongwook Yeo, PhD, were Ji’s former PhD students at the University of Minnesota. This article was part of Zhang’s doctoral dissertation project. The other co-authors were visiting scholars in LPHES.
